BAKED PECAN OATMEAL SQUARES

Baked Pecan Oatmeal Squares

Makes 12 squares

Ingredients

Bars

  • 1 cup old fashioned oats

  • 1 cups quick oats

  • 1 cup all purpose flour

  • ¼ cup brown sugar

  • ½ teaspoon baking powder

  • ¾ teaspoon salt

  • ¾ cup butter (melted)

  • ¼ cup agave syrup

Topping

  • ½ cup quick oats

  • 2 tablespoons agave syrup

  • ½ teaspoon cinnamon

  • ½ cup mini semi-sweet morsels

  • 1 cup chopped pecans

Instructions

  1. Preheat oven to 350F and grease an 8in x 8in square baking pan with butter or non-stick cooking spray. 

  2. In a large mixing bowl add old fashioned oats, quick oats, all purpose flour, brown sugar, baking powder and salt and mix until combined. 

  3. Add melted butter and agave syrup and mix until every oat is coated. 

  4. Transfer all BUT ½ cup of mixture to the greased baking pan and press gently into the bottom of the pan to create the bar’s crust. Transfer pan to the oven and bake for 12 minutes. 

  5. Add additional quick oats to the remaining oat mixture. Add agave and cinnamon and mix until combined.

  6. Sprinkle oat mixture, mini morsels and pecans over the pre-baked bars and return to the oven for an additional 20 minutes or until topping is golden brown. 

  7. Allow to cool completely before cutting into bars to serve.
