VEGAN BIRTHDAY CAKE GRANOLA

I love making granola because it is so versatile. You can add anything you want to it and it probably will still be delicious. And there are about 100 different ways to eat it. And handful straight to the mouth is my preferred way.

You know why else I love granola? Because it is the perfect gift. Put it in a jar, wrap a ribbon around it and there you have it. You are in that person’s good graces for an entire year!

That’s why I made this birthday cake granola. For a new friend’s birthday a few years ago, when I was definitely close enough to get her a birthday gift but still not close enough to be able to pick out that perfect under $30 thing from the Anthropologie gift section. 

It’s vegan and gluten-free too! But it definitely still has sugar-because birthdays…

A few tips as you are making it:

  1. This granola recipe does not have any liquid added so the bake time is shorter than some typical granola recipes and is very crispy. If you prefer a softer granola, add 2 tablespoons of almond milk and increase the bake time to 30 minutes.

  2. To make flaky, as oppose to clumpy granola, normally you would want to mixor break apart granola halfway through bake. However, because the sprinkles’ colors can bleed when they are hot, I do not recommend mixing this granola during bake.

Birthday Cake Granola

 Makes about 4 cups

Ingredients 

  • 2 cups Old Fashioned oats

  • ¾ cup Quick oats

  • 1 cup sliced almonds

  • 1/3 cup brown sugar 

  • 2 tablespoon hemp hearts (optional)

  • ¼ teaspoon salt

  • ¼ cup refined coconut oil, melted 

  • 3 tablespoons agave syrup

  • 1 tablespoon vanilla extract 

  • ½ cup rainbow sprinkles 

Instructions

  1. Preheat oven to 350F and line a large baking sheet with parchment paper. 

  2. Combine oats, almonds, brown sugar, hemp hearts and salt in a large bowl and mix well.

  3. Add melted coconut oil, agave syrup and vanilla extract to oats and fold into oat mixture with a wooden spoon or spatula until every oat is coated. Add sprinkles and mix gently once more.

  4. Pour granola evenly onto the prepared baking sheet and bake for 20 to 25 minutes or until golden and fragrant. Do not mix while baking, as sprinkles are soft and colors will spread.

  5. Oats may seem slightly soft but will crisp up as the granola cools. Store in an airtight container and serve with milk, yogurt or vanilla ice cream
